The BEST pork bbq ever. π Pork shoulder, bone in, skin off. Dusted liberally with Onion & Herb seasoning, nothing else. Hot and fast at 300 degrees with applewood chunks. Halfway there at the 3 hour mark. Roll it over every hour and a half.

@SassyGirl Thanks Sassy. 7 hour cook time for a 9lb roast to hit 195. It has cooled down so time to pull it. Juice has been separated from the fat in the fridge, I'll skim it off and mix it back in. The dog is nudging my leg. π
Greg -Do you make any type of BBQ sauce, or just slice and eat?
@BentMtn Pretty juicy on its own when the pan juices are stirred back in. My favorite is Alabama white bbq sauce. But I really like this Cattlemen's sauce. Carolina Tangy Gold SC style mustard bbq sauce. For a commercial product straight out of the bottle... this is purty good. I fine tune it with a tablespoon of cider vinegar and a 1/4 teaspoon of cayenne added to the bottle for my preference. My local grocery stores don't carry it, but ChynaβMart does.
Alabama White BBQ Sauce (for chicken or pork) 1 cup mayonnaise 1/4 cup apple cider vinegar 1 tablespoon spicy brown mustard 2 teaspoons prepared horseradish 1/2 teaspoon coarsely ground black pepper 1/2 teaspoon kosher salt 1/4 teaspoon garlic powder 1/4 teaspoon paprika 1/4 teaspoon ground cayenne pepper Mix all ingredients together. Chill for at least a couple of hours. Keeps for a week in the fridge.
