A250 party recipes

There will be a lot of hamburgers, hot dogs, potato salad, coleslaw, etc, etc, etc. on this weekend's menu. Please add your favorite cookout recipes while there's time to prepare. This is (IMHO) the best chili sauce for hot dogs. It gets crushed everytime we serve it. Scale it up or down to fit your crowd size. Coney Island Hot Dog Sauce Makes enough for 16 hot dogs, about 6 cups 2lbs lean ground beef, 90/10 mix or leaner 1/2c finely chopped sweet onion 1-1/2c ketchup 1/4c white vinegar 1/4c sugar 3Tbsp yellow mustard 1tsp celery seed 1tsp Worcestershire sauce 1tsp kosher salt 1tsp ground black pepper Combine beef, ketchup and vinegar in a large bowl, stirring/mashing until it is well mixed. Stir in remaining ingredients. Dump into a saucepan and heat on a low simmer or the ketchup will burn. Cook for an hour and a half, stirring every 10 minutes. Or dump into a crock pot and cook on the low setting for six hours.

I'm a chilly snob, but I'm not the chef. I'll show this to my wife, but it sounds damn good.

Shred your own cheese, the bagged stuff has cornstarch on it and messes up the consistency. 3 cups equals 12oz of block cheese. Food processor shredder blade will do it in seconds. Jalapeño Beer Cheese Spread 🍺 3 cups shredded sharp cheddar cheese 1 tablespoon onion powder 1 teaspoon garlic powder 1 tablespoon dry mustard 2 tablespoons Worcestershire sauce ⅔ cup amber beer (pilsner, lager, etc.) 4 tablespoons chopped jalapeno Combine all ingredients except jalapeno in a food processor and secure the lid. Pulse the ingredients until mixed, then blend on high until smooth. Stir in chopped jalapeno. Chill for at least a few hours. Spread will keep in the fridge, tightly covered, for up to 2 weeks.

@Obk9x2 -- That's my old one from last year! Co-worker from NS penned these for us after one of our famous monthly potlucks and we were all dying for the recipe. I put it on the old OBC. Glad you like it! My fave!!! I like to make it and sometimes stick in inside a hollowed out red cabbage for some pizzazz.

Good stuff but wait until a couple of hours before party time if possible... popcorn gets chewy after awhile. S’mores Popcorn 10 cups popped popcorn (heaping ¼ cup, unpopped) 1 sleeve graham crackers, gently crushed into pieces 3 cups mini marshmallows 3 Tablespoons butter flavored (or plain) coconut oil 1 1/2 cup dark chocolate chips Directions: In a large bowl combine popped popcorn, crushed graham crackers, 3/4 cup chocolate chips, and marshmallows. Place popcorn mixture onto a large cookie sheet. In a saucepan, melt coconut oil over medium heat. Add remaining 3/4 cup chocolate chips and stir continuously until melted. Remove from heat. Drizzle melted chocolate over the popcorn mixture and toss to combine. Allow to cool. Serve or place in an air tight container for up to 24 hours.

Last one... sweet corn is scarce, but I scored a dozen ears this morning. Sweet Corn, Bacon & Tomato Salad 8 cups sweet corn (dozen ears' worth, scrape the cobs too) 6 slices thick bacon, cooked crisp 1 large tomato, diced 2 avocados cubed & tossed with lemon juice 1/2 C green onion tops, sliced 1 Tbsp fresh lemon juice 2 Tbsp bacon drippings 3/4 C mayo 1-1/2 tsp black pepper In a big bowl, mix together the lemon juice, drippings, pepper and mayo. Add the corn kernels, crumble in the bacon and stir well. Gently fold in the tomato, avocado and green onions. Chill for a couple of hours.
